July is peach season, and when I think about peaches my mind directly goes to Bellini Cocktail!I have to confess that this is one of my favorite drink and especially in the warmer season is perfect to add some freshness given by the sweet white peaches.
What is a Bellini? Bellini is a cocktail made with white peach puree and prosecco, and it was born in Veneto, the region I come from, so how I cannot love this drink?

Where does the Bellini cocktail come from?
Peach Bellini Cocktail is the emblem of the classy Italian aperitive created in the 40s’ by Mr. Cipriani, founder of the famous Harry’s Bar in Venice.
The first Bellini was poured in the summer of 1948 by Giuseppe Cipriani, founder and barman of the legendary Harry’s Bar in Venezia. Located just off the Grand Canal, the iconic bar was frequented by international writers, artists and actors.
Until nowadays Cipriani Venice offers a traditional Italian menu, with the best seasonal produce found in the Venetian countryside. In fact, inspired by the region’s fragrant white peaches and world-famous sparkling wine, the barman invented the Bellini.
The Peach Bellini recipe calls to gently stir two parts Prosecco and one part fresh peach pureé, served in a chilled flute. Legend has it that the drink’s characteristic sunset shade reminded the bartender of the strikingly chromatic paintings by 15th-century Venetian artist Giovani Bellini, hence the name. Thanks to Cipriani’s international regulars, word of the refreshing drink quickly spread to New York, Paris, and beyond.
Bellini cocktail recipe ingredients
To make a great Bellini you need great white peaches! So, my tip before you go to the grocery store is to look for peaches that are plump, ripe and with no marks on their skin – which means you will have some part of the fruit very soft and brown.
When you pack your grocery, be careful and treat them as a delicate flower, to avoid the fruit to smush and be disappointed once you get home.
Peaches are low in calories, rich in antioxidants and they have a small amount of mangnesium and vitamin B. A bonus of eating peaches is that they aid the skin to retain moisture, thus making your skin more elastic. So drinking bellini, is a bit like drinking a beauty potion!
The other key ingredient is Prosecco wine, possibly dry and a bit of fresh mint to garnish along with some white peaches slices. As you can see the ingredients are simple, fresh and easy to assemble together. Let me share the steps I follow to make this refreshing and fizzy Italian cocktail.
How to make a Bellini
To make Bellini you will need to peel the peaches, remove the stone and chop them in pieces. Then you proceed by placing them in a blender.
Blend until they are smooth and evenly combined into a puree. Once your puree is ready, you take 1/4 cup of it and add it to a flute, topping it with 1/2 cup of prosecco.
As a garnish you can use a slice of peach cut it in the middle and place it on the edge of the glass. Some mint leaves will also add a touch of color. You can also freeze you peach slices and let them go in the drink, so that they will maintain it cooler.

Bellini Cocktail variations
In case you do not drink, you can make Bellini mixing peach puree with a sparkling non-alcholic drink.
If you do not have white peaches, which are hard to find in US, you can use yellow peaches, or peach juices or peach nectar. Alternatively you can intensify the flavor of this Prosecco Cocktail with some peach schnapps drinks.
You can also make Bellini with other fruits, according to the season.
Citrus: The probably most popular variation is with oranges so that you will have a Mimosa. But there are other great cocktails, for example, mandarin is great to make a Puccini.
Strawberry: are best for a Rossini at the beginning of Summer. Or you can just be creative and try with raspberries or pears.

What to serve with Peach Bellini cocktail?
This drinks is the ideal accompaniment to a brunch or summer lunch in the sun. I recommend to pair it with White Asparagus and Eggs, Italian Frittata Recipe or Zucchini Fritters.
