Valentine’s Day, Superbowl Sunday and Mardi gras all revolve around food, so figuring out what to cook in February can be a challenge if you want to celebrate it all! ARTICHOKES

Artichokes are the gems of the winter months and I can never get enough of them! Try a classic Artichokes Risotto, creamy and filling, it is a great comfort food. I also encourage you to buy fresh artichokes and clean them yourself. I wrote a full blog post on how to clean artichokes.

CAULIFLOWER

Cauliflower along with Broccoli and cabbage are reversing at farmers’market and grocery stores! So there is no better time than now to eat this superfood! I have some delicious recipes for you this month. Make a savory Cauliflower Anchovies Pasta, made with minimal ingredients it is a pasta recipe that hits the spot. Or if you like more hearty flavor make a classic Pasta e Lenticchie with Cauliflower in a tangy lemony dressing, It’s the perfect way to start Lent on 22nd February.

BEETS

February brings also beetroots. I grew up eating lots of beets, mostly roasted or boiled. Lately I experimented more with this root veggie, creating some healthy recipes. Make a colorful salad with oranges, beets and fennel or blend them to make a delicious Creamy Roasted Beets Pasta or Pink Pasta.

CITRUS FRUITS

I must confess that citrus fruit are my favorite! In particular I love blood oranges, as to me they are truly the essence of Italy and their color is due to the volcanic soil where they grow. The best quality of this ruby fruit comes from the Etna’s slopes in Sicily and with these fruit you can make delicious recipes! Try a new recipe like a classic Orange Ricotta Cake or a fantastic Chicken thighs roasted with Fennel and Oranges.

LEEK

Leeks are part of the allium family like garlic, onions and shallots. They have a milder taste, and while they can easily replace onions in many recipes, they are also great as a stand alone. Try this Leek fritters with Sumac Yogurt Sauce and you will not be disappointed. Another great recipe is Gemelli pasta with Leek and shiitake mushrooms. Ready in 30 minutes, it is a delicious recipe for this time of year. Creamy without using crème fraîche, the pasta water and the Parmesan cheese will transform this simple pasta in a meal of immense pleasure.
