I must confess that this Apple Galette with Cinnamon is inspired by the memory of my 18 months in Paris, where I have been exposed to the French cuisine in its whole richness and regional variations, thanks to few weekend trips I took. And while I am still in Italy, I decided to bake this dessert with my mom, to enjoy it with our last few coffees together, before my departure,

Galette is usually a pie which edges are wrapped to contain a filling that can be savory or sweet.  or sweet filling. The Apple Galette with Cinnamon consists of a thin layer of apples spiced with cinnamon on top of a rustic spelt crust enriched with walnuts.

How to make Apple Galette with Cinnamon

Making a galette is very fast and easy, follow my steps and you will say too that this cake is very simple and yet so delicious. There are three necessary steps to make this Apple Galette recipe. First, you will need to make the dough and let it rest. As a second step, you will prep the apple. Then you will combine the dough and the apple and bake it. You will need 9 ingredients, and in one hour you will have a vegan pie, that is tasty, healthy, and will satisfy your sugar cravings, especially if you have it for breakfast

STEP 1. HOW TO MAKE THE SPELT DOUGH

You will need spelt flour. I like using spelt as it is a tremendous Mediterranean cereal. The dough is enriched with some walnuts, sugar and it is coming together thanks to the addition of EVOO and water. You will need a pinch of salt too. The ingredients are very simple, making this pie the perfect morning cake to eat for its balanced combination of ingredients.

STEP 2.HOW TO PREPARE THE APPLES

For the filling, just peel a couple of apples, add sugar, cinnamon and lemon juice and let it sit for 20 minutes. Apples are in season, and when they encounter cinnamon and sugar will add the perfect touch of sweetness to your fall morning.

STEP 3. HOW TO ASSEMBLE THE GALETTE PIE

To assemble the pie, you will need to roll out the dough with a rolling pin and place it on a round baking dish lined with baking paper. Spread over the pieces of apples in a circular arrangement. Continue with closing the outer edges of the dough towards the center forming a crown.

Brush the edge of the galette with the sugar. lemon cinnamon juice of the apple. Bake it in the oven at 350°F (180°C) for 45 minutes until golden. Once baked, let it rest on a cooling rack and eat it at room temperature.

Variations and substitutions

This galette pie with apple and cinnamon is vegan and suitable for vegetarians and paleo diet. It is also suitable for who is following a low-calorie diet.

If you prefer, you could sub the spelt flour with wholewheat flour or you could make the dough with 50% wholewheat and spelt. In both cases, it will be less rustic. You can sub the walnuts with almonds for a more delicate taste.

The filling can be adapted to the season and create several variations. In fall and winter, apples and pears are great to use. You can mix them or make it just with one of these two fruits. In late spring, you could eat strawberries. In summer, peaches or apricot would be delicious and in the late summer, try it with mixed berries or grapes.

Ingredients

For the pastry

  • cup spelt flour whole wheat
  • 3 tbsp olive oil extra virgin
  • 4 tbsp water
  • 1 tsp salt
  • 2 tbsp walnuts finely chopped
  • 2 tbsp sugar brown

For the filling

  • 2 cups apple cut in slices
  • 1 tbsp sugar brown
  • 2 tbsp lemon squeezed
  • 1 tbsp cinnamon powdered

Instructions

STEP 1. HOW TO MAKE THE SPELT DOUGH

  • In a bowl add all the ingredients starting from the dry ingredients: the wholewheat spelt flour, walnuts, sugar and salt. Add the EVOO and water. Work all the ingredients until they form a dough.
  • Wrap the dough in a transparent cling paper and place in the refrigerator for 30 minutes.

STEP 2: HOW TO MAKE THE FILLING

  • While the dough is resting in the refrigerator, wash and peel all the apples. Cut them in regular slices.
  • Place the apples slices in a bowl and add the sugar, the cinnamon and the lemon juice. Mix it and let it rest.

STEP 3. HOW TO ASSEMBLE THE GALETTE

  • Roll out the dough with a rolling pin and place it on a round baking dish lined with baking paper. Spread over the apple slices in a circular arrangement.
  •  Close the outer edges of the dough towards the center forming a crown.
  • Brush the edge of the galette with the sugar. lemon cinnamon juice of the apples. Bake it in the oven at 350° F (180° C) for 50 minutes.
