This air fryer Brussels Sprouts recipe has been a game changer in my kitchen! I have been used to always make Brussels sprouts the classic way—simply steamed. But when I started looking for ways to get a little more creative, I pulled out my air fryer. It turns out, my husband Robert—who absolutely loves Brussels sprouts—was the perfect taste-tester. And let me tell you, these crispy, golden bites quickly became a new favorite at our table!

These crispy air fryer Brussel sprouts are golden-brown on the outside, tender on the inside, and finished with fragrant garlic and a squeeze of fresh lemon juice. Brussels sprouts are naturally rich in fiber, vitamin C, and antioxidants, and when cooked in the air fryer they transform from humble little cabbages into a crave-worthy, restaurant-style side dish. With just 6 simple ingredients, you’ll have perfectly crispy sprouts on the table in under 20 minutes — no sogginess, no fuss, just pure veggie magic!

NOTE ON INGREDIENTS

The main focus here is about Brussel Sprouts: their benefits and a few tips on the preparation for the best air fryer Brussel sprouts.

BRUSSELS SPROUTS PREP & PROPERTIES

Brussels sprouts may look like tiny cabbages, but they pack a nutritional punch. They’re loaded with vitamin C, vitamin K, and fiber, making them both immune-boosting and digestion-friendly. When roasted or air fried, their natural sugars caramelize, creating a nutty, slightly sweet flavor that balances their earthy bite.

For best results, choose firm, bright green sprouts that are similar in size so they cook evenly. Trim the stem ends just slightly and remove any yellow or loose outer leaves. If your sprouts are larger than 1 inch across, cut them in half (or even quarters). This not only helps them cook faster but also increases the surface area for crispiness. Save the leaves, wash them and pat them dry.

Patting the sprouts dry after rinsing is crucial — excess moisture leads to steaming instead of crisping. Tossing them with just a light coating of olive oil and seasoning ensures even browning. By adding thin slices of garlic and the loose Brussels leaves near the end of cooking, you get little golden bites of flavor without risking burnt garlic or leaves. A final squeeze of lemon brightens the dish, cutting through the richness and adding freshness.

AIR FRYER BEST TOOL: PAPER LINERS

When cooking with the air fryer I always use disposable paper liner. Vailnd is a great brand and I truly recommend it: they are non-stick, oil-proof, and food grade, making cleaning a breeze and leaving your food crispy!

They come in different sizes and you will need to insert them in the air-fryer basket: easy peasy!

AIR FRYER TEMPERATURE AND COOKING TIME

The sweet spot for crispy Brussels sprouts is 375°F. At this temperature, the hot circulating air caramelizes the outside while giving the centers time to soften. Cook the sprouts for 12–14 minutes total, shaking the basket halfway through for even browning. At the 10-minute mark, add the sliced garlic and continue cooking until both the sprouts and garlic are crisp and golden. If you like them extra crunchy, increase the heat to 400°F for the final 2–3 minutes.

STEP-BY-STEP INSTRUCTIONS

FAQ

What temperature and time should I use?

A good baseline is 375 °F for about 10 minutes, flipping or shaking halfway through.   Increase to 400 °F especially if you like extra browning, otherwise do so only in the last part. If your air fryer runs hot (or your sprouts are small), you may need slightly less time. Always keep an eye on them.

Do I need to preheat the air fryer?

Yes—to get more consistent browning and crisping, preheating is recommended. Some recipes specify turning it on and letting it heat before putting in the Brussels sprouts.

How much oil is needed?

You don’t need a lot—just enough to coat the surfaces so they brown, not so much that the sprouts sit in oil. I use 1 tablespoon for a pound of Brussels sprouts.

Can I crowd the basket?

No—do not overcrowd. The air needs to circulate around each sprout to crisp the edges. If the basket is too full, they’ll steam instead. Cook in batches if necessary.

Do I need to shake or flip halfway?

Yes. About halfway through the cooking time, open the basket and shake or flip the sprouts to expose different sides to the hot air. This ensures even crispiness.

What if the inside is done but the outside isn’t crispy (or vice versa)?

If the outside is browning too fast and the interior is undercooked, reduce the temperature slightly and/or cut the sprouts smaller.

If the interior is fine but the edges aren’t crispy, you can extend the time a bit, but monitor so they don’t burn.

Can I use frozen Brussels sprouts?

It’s trickier. I prefeer fresh in general, because frozen sprouts release more moisture and can turn soggy.  If you try it, do not thaw first, ensure they are well separated, and compensate with time.

Which temperature can I roast Brussels Sprouts (oven)?

Yes — you can roast Brussels sprouts in the oven. Toss them with a little oil, salt, and pepper, then roast at 400 °F (200 °C) for 20–25 minutes, flipping once, until browned and crispy. The sweet spot for roasting Brussels sprouts is 400 °F (200 °C). At 400 °F, they roast in about 20–25 minutes, giving you a tender inside and crispy, caramelized edges.

You can go a bit hotter (425 °F / 220 °C) if you like extra browning, just check them around 18–20 minutes so they don’t burn. Lower temps (like 350 °F / 175 °C) will cook them through but won’t get them as crispy.
