What to cook this Easter

Spring is here and with it the most joyful holiday: Easter. Easter has always meant rebirth to me, not only because of its symbolic meaning, but also because of nature blooming the most delicious vegetables, ready to be transformed into a succulent meal. Easter has always been a celebration, usually, we celebrate Easter over lunch, a big long lunch with many courses, the whole family sitting around the table sharing moments of joy. That’s Easter for me and that’s how I like to celebrate it!

I must confess that cooking a meal for my loved ones brings me a lot of joy, and for that reason, I hope to bring the same happiness to your kitchen with this collection of delicious, tasty spring recipes.

Even if you don’t celebrate Easter, I hope these spring recipes will be like blooming flowers on your table and make you feel like you’re in the Italian countryside!

Easter Appetizers

Let’s start with the appetizers: a Prosciutto dip over tartine is delicious and it is a super easy and quick recipe.

You might want to have a vegetarian option, so a tangy Artichoke Salad is just perfect as the creamy Parmesan, pairs well with the crunchy walnuts and the bittersweet artichokes, all is dressed with a lemon vinaigrette. No one can resist that

Easter Primi

A primi (“first”) is usually a pasta or risotto served after the appetizer but before the secondi or main course. When you serve a primi, you usually make a slightly smaller portion. A classic spring recipe is a Creamy Artichokes Risotto, while if you prefer a more delicate flavor, a Pasta with Ricotta, Asparagus and Peas is not to be missed.

Spring Secondi

A secondi is usually a main course. At Easter, a classic Roast Veal will delight your guests with its succulent meat. If you have some vegetarians, bring the Classic Ligurian Easter Pie, Torta Pasqualina to the table. This cake is made with spinach, eggs, ricotta and parmesan and when you cut into it, it looks quite festive as the eggs are suspended. What could be more Easter-y than that?

Side dishes

As a side dish I recommend Roasted Potatoes and Sauteed Artichokes, both vegetables complement the veal perfectly and are also appreciated by vegetarians.
