Ingredients

FOR THE BAKED CHICKEN AND POTATOES

  • 1.5 pound chicken
  • 1 pound potatoes
  • 5-6 cloves garlic
  • 4 oz olives green, pitted
  • 1 lemon quartered

FOR THE DRESSING

  • 4 tbsp olive oil extra virgin
  • 2 tsp oregano dry
  • 2 tsp thyme dry
  • 1 tsp salt
  • ½ tsp pepper black crushed
  • 1 unit lemon squeezed

Instructions

  • In a large bowl, combine oregano,thyme, olive oil, lemon juice, salt, and pepper.
  • Preheat oven to 375°F (190°C).
  • Dry chicken thoroughly with paper towels.
  • Add chicken, and arrange skin-side up in a baking dish rimmed with baking paper.
  • Add the potatoes, garlic cloves, olives and lemon quartered.
  • Drizzle with the dressing sauce.
  • Bake 45 minutes, flipping potatoes and rotating pan halfway through.
  • Broil 2 minutes for extra crispiness.
  • Rest 10 minutes, toss with pan juices, and serve.
