Easy Italian Pear Cake

Ingredients

  • 2 cups flour 00 or all-purpose
  • 3/4 cup sugar
  • 2 unit eggs
  • 8 tbsp butter
  • 2 tbsp ricotta full fat
  • 2/3 cup milk whole
  • 2 tsp baking powder
  • 1 tsp vanilla
  • 4 unit pears
  • 1 tsp salt
  • 2 tbsp powdered sugar
  • 4 tbsp almond slivered

Instructions

  • First, whisk together the eggs, sugar and vanilla. Slowly melt the butter. Then gradually add butter, 2/3 cup of milk. Mix well. Then add 2 tablespoons of ricotta, mixing it slowly to avoid the ricotta to liquefy.
  • Finally, add sifted yeast, cinnamon and flour until you get a soft dough.
  • Continue peeling the pears. Cut a pear into small pieces, add them to the dough and turn well.
  • Line a springform pan with parchment paper and butter the sides. Pour the batter into the springform pan and place the pear wedges in a radius on top. Sprinkle with Slivered Almonds on top.
  • Bake the cake in a preheated oven at 180 degrees for about 45 - 50 minutes or until a toothpick comes out clean*. If you find that the cake is turning over too much, cover it with a foil. Sprinkle it with powdered sugar! Your fluffy pear cake is ready to serve! Mangia.

Notes

  • Serve this cake with a bit of whipped cream or a dollop of mascarpone.
  • If you feel fancy, dust the cream with extra cinnamon.
