What to cook in June is my recommendation of recipes using fresh seasonal produce. June is bringing us the full rainbow: we might argue about what season is June? Technically fall into spring, but June marks also the beginning of summer, and June produce give us the best of spring and the first summer goodness.
Some of the seasonal fruit June is abundant includes Cherry, Apricot and the very first nectarines. As for the vegetables in season June calls for the last few spring asparagus, but invites you to start cooking peppers, tomatoes and zucchini.
Whether you are looking for easy weeknight dinners or refreshing salads for the warmer days, here you can find easy Italian recipes that use seasonal produce. I am very supportive of cooking seasonally not inly because it’s sustainable but also because it follows the classic Mediterranean diet.

ARUGULA

ASPARAGUS
Asparagus are still in season, but for a short period only. For June I recommend you to make a spring Asparagus Pasta with Ricotta Pea pesto or a filling and delicious Pesto Salad with Shrimp Asparagus and Farro.


CARROTS
So underrated, this vegetable is so versatile and definitely you can be sustainable and use also carrot tops. Plus one of the benefits of carrots is the fact they are rich in beta-carotene and Vitamin A, which promote a healthy glowing skin.

CHERRIES
This is the season! I must confess that cherries are for me very special as a town close to where I grew up celebrates this fruit with traditional recipes! Make a Cherry Ice-Cream (no churn) or add them to an unusual salad! Those are great recipes for those hot summer days!


EGGPLANTS
The eggplant season has also just started, while I am creating new recipes I will leave you with a few solid ones that you can make all summer long! Pasta all Norma is a classic and this eggplant panini is a promise to a delicious meal that will give you plenty of energy.


NECTARINES
Apricot and Nectarines are in their begin of season: try a delicious apricot ricotta sandwich in a focaccia bread, ideal for a picnic at the park or a day at the beach. Use Nectarine to make your own jam, so that you can use it over toast or to accompany a cheese plate.and


PEPPERS
Peppers are always a controversy! Some people love them, some other hate them. I must confess that I was used to love only my dad roasted peppers and then with years I expanded a bit my culinary taste so that now I turned into a lover! I recommend you to make these Simply Roasted Peppers as it’s the base for many other recipes, such as the Bruschetta with Peppers , Anchovies and Bufala.


STRAWBERRY

TOMATOES
I must confess that when it comes to tomatoes I am one of the pickiest person! Not sure it is an Italian thing, but they have to be firm, plump and with lots of meat! I love just slicing them and eating them with bread in the classic bruschetta style or I love eating them with pasta such as this one where the sweetness of the cherry tomatoes meet the briny capers and the crunchy fried breadcrumbs.


ZUCCHINI
Either in a pasta or by themselves, zucchine start making their appearance. So let’s dig in! A classic spaghetti squash tuna pasta is the perfect recipe for al fresco lunch and zucchini salad are the perfect side dish for your al fresco BBQ !
