Summer is in full swing, and while a few weekends trips await us, I enjoy being in New York in the summer. The city is buzzing as always, the grass of the park in front of our balcony is greener than ever and the farmer’s market across the corner brings all the best produce the season can bring. So while sometimes we tend to look for what we do not have, I learned to be thankful for all the great things July will bring.

Whether you are looking for easy weeknight dinners or delicious side dishes here you can find Italian easy recipes that use seasonal produce. Cooking seasonally is at root of my cooking philosphy: what the nature gives you each month, is what your body needs.

ARUGULA

Go for these simple good salad which is an elegant and simple side dish or use it as a side dish for this Italian style Pistachios Crusted Salmon.

CHERRIES

This is the season! I must confess that cherries are for me very special as a town close to where I grew up celebrates this fruit with traditional recipes! Make a Cherry Ice cream or use them in your tiramisu!

EGGPLANTS

The eggplant season has also just started, while I am creating new recipes I will leave you with a few solid ones that you can make all summer long! Pasta all Norma is a classic Sicilian recipe that combines the crunchy eggplants’ bites with the salted ricotta shavings. Another great dish, very traditional is Eggplant Parmigiana: layers of fried eggplants alternating with gooey mozzarella and vibrant tomato sauce.

GREEN BEANS

Green Beans are always a great add on to any salad! Try them in this Italian Potato Salad or in the Three beans salad. Both recipes are also great as fourth of July recipes for your BBQ.

PEPPERS

Peppers are in season and are very versatile! I recommend roasting them and making a Calabrese pesto, great as a dip or to toss a pasta. Any meat lover reading this post? Stuffed Italian Peppers will satisfy your meat cravings!

STRAWBERRY

In sweet or salty preparation, strawberries are the summer highlight. A Strawberry Tart with Mascarpone cream is the delicious end to a dinner or Sunday lunch. Or if you are patient enough, make a delicious Strawberry rhubarb jam, the perfect spread for your slice of toast!

TOMATOES

I must confess that when it comes to tomatoes I am one of the pickiest person! Not sure it is an Italian thing, but they have to be firm, plump and with lots of meat! Buy tomatoes and make a Caprese Salad, a classic easy no cook  recipe. Or use them in this Spicy mussel pasta.

ZUCCHINI

Either in a pasta or by themselves, zucchine start making their appearance. So let’s dig in! A classic spaghetti squash tuna pasta is the perfect recipe for al fresco lunch and zucchini fritters are a delicious treat for a day at the beach or a hike.
